Best beef curry

1kg of beef1 onion minced2 table spoon of garlic minced1 tablespoon of ginger minced1 tbsp chilli powder1 tbsp numeric1 tbsp cumin1 tbsp coriander1 tbsp garam masala

Mix up all the spices and aromatics with the beef and leave for 15-30 minutes to marinate.Add a minimal amount of oil to a pan and fry some onions,1-2 bay leaves and 1 - 2 finger sized sticks of cinnamon until the onions turn translucent.Add the marinated beef then keep on stirring the beef until a fair amount of fat has been rendered and some water is released. Add some salt at this point.Add some water and simmer on low heat until the beef is fork tender. The sauce can be as thick or thin as you like, I think thicker is better and season to taste along the way.Serve it with rice or parata (flaky flat bread).Bonus - This is extra damn good if with some pickled shallots. Just slice some red onions or shallots roughly, then add in some sliced green peppers and vinegar or lime juice. Season to taste. This pickled shallot takes the beef + rice to the next level.
