Grilled Cilantro Lime Drumsticks

Ingredients

  • chicken drumsticks - 2-3 lbs.
  • lime zest - from 1 lime
  • lime juice - from 2 limes
  • soy sauce - 1 Tbsp.
  • honey - 1/4 cup
  • garlic - 2 cloves
  • jalapeno - half or whole (depending on desired spice)
  • cilantro - 1/4 cup
  • olive oil - 2 Tbsp.
  • salt pepper

Directions

  • Place the lime zest and juice, soy sauce, honey, garlic, jalapeno, and cilantro in a food processor. Pulse a few times to chop. Then turn it on and stream in the olive oil. Set aside 1/4 cup of the marinade. Put the drumsticks in a large plastic zipper bag and pour the marinade over the top. Marinate in the fridge for 30 minutes up to 2 days. The longer they marinate, the better they'll taste.
  • Preheat gas grill to low-medium (or 300F-350F). Remove drumsticks from marinade and season with salt and pepper. Place on grill. Turn the drumsticks every few minutes and baste them with the reserved marinade. Cook for 20-30 minutes, until the internal temperature of the drumsticks is 165F. If you feel like the skin is getting too charred, either turn the heat down. Or turn the heat off of 1 side of the grill, and turn the heat to high on the other side . Place the chicken on the cool side to finish cooking with the lid closed.
