Salmon Poke Bowl

Ingredients

  • Poke
  • 10oz Sushi grade salmon
  • 1/2 english cucumber diced
  • 1 small shallot sliced
  • 1 ripe avocado diced
  • 2-3 radishes sliced thinly
  • Marinade
  • 3 tablespoons soy sauce
  • 1 1/2 tablespoons mirin
  • 1 teaspoon toasted sesame oil
  • Juice of 1/2 meyer lemon
  • Toppings
  • 2-3 green onions diced
  • 1 teaspoon red tobiko
  • 1 tablespoon toasted nori sliced

Directions

  • Combine cucumber, shallot, and salmon in a bowl. In another bowl, whisk together soy sauce, mirin, sesame oil and lemon juice. Combine and refrigerate for 20 minutes or up to an hour. Slice radishes and avocado and set aside.
  • Once the fish has marinaded add the avocado and radishes and serve over rice or a small salad.
  • Top with green onion, tobiko, and toasted nori.
