Salmon Poke Bowl

Poke10oz Sushi grade salmon1/2 english cucumber diced1 small shallot sliced1 ripe avocado diced2-3 radishes sliced thinlyMarinade3 tablespoons soy sauce1 1/2 tablespoons mirin1 teaspoon toasted sesame oilJuice of 1/2 meyer lemonToppings2-3 green onions diced1 teaspoon red tobiko1 tablespoon toasted nori sliced

Combine cucumber, shallot, and salmon in a bowl. In another bowl, whisk together soy sauce, mirin, sesame oil and lemon juice. Combine and refrigerate for 20 minutes or up to an hour. Slice radishes and avocado and set aside.Once the fish has marinaded add the avocado and radishes and serve over rice or a small salad.Top with green onion, tobiko, and toasted nori.
